I use mostly whole spices for mine (Penzeys is a GREAT place to buy small amounts to experiment), and add a couple of pepper corns. I especially like Assam or Ceylon loose leaf tea for my Chai. There is nothing like homemade Chai! Thank you for reminding me. I also have a recipe for (but haven't tried it yet) Chai Ice Cream --- I know what I'll be trying this weekend!!!
